Ingredients

  • 1 cup unsweetened shredded coconut
  • 3/4 cup Monkfruit sweetener
  • 1/2 stick butter
  • 3 eggs
  • 1/2 cup canned unsweetened coconut milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 300 degrees.
  2. Mix coconut milk and shredded coconut to soak while mixing up other ingredients.
  3. In a bowl, combine sweetener, eggs, vanilla, and butter.
  4. Add coconut and milk mixture to other ingredients then beat on medium until combined.
  5. Pour into greased 9" pie pan.
  6. Bake at 300 degrees for about an hour or until slightly browned on top.
