Posole Ingredients
For a serving of 8-10
- 3lbs Pork, chicken, or beef
- 5qts water
- 1 onion, peeled and chopped
- 1 head garlic, peeled and crushed
- 2 bay leaves
- 1 Tablespoon oregano
- 2 Tablespoons chicken broth boullion (or 6 cups chicken broth)
- 1 Tablespoon lemon pepper seasoning
- ~6lbs canned white hominy, drained and rinsed
- Cumin
- Salt to taste
Chili Sauce Ingredients
- 5 tablespoons powdered red chile from New Mexico (something like this)
- 3 tablespoons oil or lard
- 3 tablespoons flour
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon cumin
- 2 teaspoons oregano
- 2 tablespoons chicken bouillon
- 1 teaspoon salt
- 1 teaspoon sugar
Pasole Garnishments
To mix in the soup when served
- lemons
- limes
- green cabbage
- purple cabbage
- avocado
- oregano
- onions
- cilantro
Posole Instructions
- put meat and all ingredients but hominy in pot and cook
- pull meat out and shred and put it back in
- Add hominy
- Adjust spices to taste
Chili Sauce Instructions
- In a sauce pan, heat the oil, and whisk in flour
- Cook until flour taste is out (a couple of min)
- Add chili and cook that in to (2min)
- add 4 cups water
- keep whisking and add all seasonings
- As it thickens, add water to taste
