Posole Ingredients

For a serving of 8-10

  • 3lbs Pork, chicken, or beef
  • 5qts water
  • 1 onion, peeled and chopped
  • 1 head garlic, peeled and crushed
  • 2 bay leaves
  • 1 Tablespoon oregano
  • 2 Tablespoons chicken broth boullion (or 6 cups chicken broth)
  • 1 Tablespoon lemon pepper seasoning
  • ~6lbs canned white hominy, drained and rinsed
  • Cumin
  • Salt to taste

Chili Sauce Ingredients

  • 5 tablespoons powdered red chile from New Mexico (something like this)
  • 3 tablespoons oil or lard
  • 3 tablespoons flour
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 2 teaspoons oregano
  • 2 tablespoons chicken bouillon
  • 1 teaspoon salt
  • 1 teaspoon sugar

Pasole Garnishments

To mix in the soup when served

  • lemons
  • limes
  • green cabbage
  • purple cabbage
  • avocado
  • oregano
  • onions
  • cilantro

Posole Instructions

  • put meat and all ingredients but hominy in pot and cook
  • pull meat out and shred and put it back in
  • Add hominy
  • Adjust spices to taste

Chili Sauce Instructions

  • In a sauce pan, heat the oil, and whisk in flour
  • Cook until flour taste is out (a couple of min)
  • Add chili and cook that in to (2min)
  • add 4 cups water
  • keep whisking and add all seasonings
  • As it thickens, add water to taste
